Im Polo, the man behind the apron (mandilon in spanish). My project gives you a glimpse into the traditional and contemporary mexican cuisine, which besides of being healthy is mostly gluten free and has a wide variety of vegan options. You can find recipes in this blog and soon I will launch my online shop with the ingredients you need to cook healthy mexican food.

I’m also committed in introducing you to the great variety of mexican distillates and fermented beverages, all of them characterized of being natural, handcrafted, and of great quality and very difficult to find outside mexico.

I organize mexican food pop-up events and tastings in Berlín, in this way you can also taste the original flavors of mexican food and beverages and discover the true story behind mexican cuisine, a fusion between mesoamerican and european cooking techniques.
